Auntie Jane’s Bibingka
- 1 Box mochiko
- 2 Cups Sugar
- 1 stick of butter
- 2 Cans Coconut Milk (4 cups)
- 4 Eggs Beaten
- 1 tsp Vanilla
Mix altogether. Pour into a pan. Bake 350 degrees till done or toothpick inserted comes out clean. Approximately 30-45 minutes depending on your oven.
Auntie Carmen’s Bibingka
- 1 Box Mochiko
- 1 stick butter
- 1 large can of carnation milk
- 1 cup regular milk (I have not tried other kinds of milk yet)
- 1 cup dried shredded coconut
- 2 cups sugar
- 2 eggs
- 1 tsp baking powder
Mix altogether. Bake 325 degrees for 45-1 hour, or till toothpick inserted in cake comes out clean.
