Medjool Dates with Chorizo and Bacon

  1. Medjool dates, as many as you desire
  2. Chorizo
  3. Bacon

Cut a slit in the date and remove pit.  Stuff each date with a piece of chorizo.  Close the date and wrap with bacon.  Secure with a toothpick, seam side down.  Use a non-stick frying pan to fry the dates.  Do not add any oil to the pan.  Fry till to your desired crispiness.  I like mine very crispy so I will fry, turning on its sides till desired doneness.

Variations:  You can also stuff the dates with blue cheese and wrap with bacon and bake at 425° for 15 mins.  You can also stuff the dates with blue cheese and a slice of pickled jalapeño pepper, wrap with prosciutto, jam on and bake 350° in oven for a few minutes till warm.  Another variation is to stuff the date with dark chocolate and bake in the oven till warm, or wrap a bacon around the date and bake at 425° till crisp. Use your imagination to come up with your own variation.

Alternatively, use fresh figs and do not bake but use prosciutto or jamon to wrap the figs.
