Ikan sinigang or fish soup

halibut cheek sinigang

  • Onion or shallots
  • Tomato
  • Fresh ginger
  • Fish collar, head, or belly part
  • Sea salt
  • Juice from 1-2 lemons, depends on how sour you want the soup or kamias
  • Jalapeno (sliced, optional)
  • Water

Cabbage or broccoli or kang kong or mustard greens, sili leaves (pepper) or other vegetables

Slice a small onion and put in bowl.  Next slice tomato, add to the onion.  Smash ginger and add that to the bowl.  Add some sea salt. Ginger can be as much as you want.

Put enough water into a cooking pot for the amount of soup you want.  When it boils, add the ginger mix.  When the water boils again, add the vegetables and at the next boil, add the fish, jalapeno, kamias.  On the next boil, add lemon juice.  Taste and add more salt, lemon juice to suit your taste.

If using kamias, add same time as the ginger.  Kamias is also known as pias in Ilocano and makes the soup sour.  Sinigang is supposed to have a sour taste.

This recipe is this simple.  I learned this from my mom.  You can use halibut, salmon or other fish.  Very important for fish to be fresh.
